Your experience matches mine. After reboot, the SVGA needs to be re-enabled, then rebooted again, then disabled, before the GRID will take over. This is why it's still 'tech preview', I suppose. 
I got the firmware update directly from Nvidia which is supposed to enable dual monitors. It involves creating a bootable USB stick then running an update process for each GPU (ie: 4 times per K1). I have no had a chance to test the dual monitor functionality yet, however I should be able to test by end of next week. I will post back with the results.
