I believe that Weinstein5 is correct - the datacenter license does an end-run around the concern. You have to tweak the UI a bit because the server UI is a bit different than the default win7 UI, but that should not be too hard.
(just edited to be clear - this means that you leverage your datacenter license to spin up a windows server VM that will be delivered as your View Desktops - so it is win server that your users access, NOT win7 .....)
