Hi everyone,
Just resolved the issue with VMWare support.
The problem was 'Base Video' was selected in System Configuration > Boot > boot options -- it must not be selected.

NOTE: The issue with multiple monitors would occur with other devices and clients (ie: View client on Windows), so this will resolve issues on those clients as well.
