If you're seeing them all drop at the same time, my initial suspicion is the network. Some kind of firewall monitoring and blocking connections between VLANs perhaps?

To create a Hardware Version 9 VM you will need to use the vSphere Web Client. HW8 only supported up to 128MB of video RAM. I don't think your VMs will be able to use 512MB of memory without hardware...
